Cauliflower Fritters

Today will be all about cauliflower. I am not vegetarian or vegan but I do fluctuate on the amount of meat I consume. It is very important that I find meals without meat to prepare and let us be honest, we want it to still taste flavorful and it can be just that. The fun thing about this dish is how you can tailor the ingredients to your liking and save your fritters in the fridge for the next 3 days ready to heat up for breakfast. For this blog, I used the following ingredients:
2 Eggs
a few pieces of Kale leaves
1 tsp salt
2 Scallions thinly sliced
1 tsp pepper
1/2 tsp Paprika
1 tsp Oregano
a half of a large head of Cauliflower
1 tsp garlic powder
2/3 cup Sharp Cheddar cheese
1/4 cup All purpose flour (or almond flour)
Butter for cooking or oil
You may add what ever seasonings you would like at this point. Just make sure you are not going over board with adding too much seasoning.
Begin by making sure you have all the supplies you will need to start cooking. This will consist of the pan you will be using to cook your fritters in, a medium sized bowl to combine all ingredients together, a food processor (if you do not own a processor like myself, you can use a knife and cut very finely or a box grater),cheese cloth to drain out the excess water from the cauliflower, and last but not least a spatula for flipping your fritters or a fork, your choice.
Once you have everything out and prepared, you can begin cooking. You want to start with cutting up your chives, kale, and your cauliflower very finely based on you not having a food processor then put into your bowl with salt until well-mixed. Next, drain out any excess water in the cauliflower using the cheese cloth. Once finished, combine your eggs, flour, cheese, and seasonings. At this point you will want to turn on your burner to medium heat to heat up your pan. Then start mixing everything else together in your bowl. Butter your pan and begin scooping out your fritters to thin patties. You will want to cook on
each side until golden brown.
Transfer to a paper towel on a plate to drain any excess oil or butter. You are finally finished and can serve with your
choice of toppings. for mine I used:
thinly sliced purple onions
cilantro
sour cream
smoked bacon on the side ( just precook your bacon ahead of time)
sriracha
